Jimmy started working in restaurants at the age of 14 bussing tables. Working for Tony Roma’s Corporation through high school and college, he continued to learn front and back-of-the-house operations. After 15 years with the company, he left to enroll in the culinary program at Milwaukee Area Technical College. In 2011, he joined the Sanford Restaurant team.
Jimmy’s experience also includes being a test kitchen cook for Reader’s Digest Association’s Taste of Home magazine where he tested 40 recipes per week and contributed to publications. Jimmy also worked for Milwaukee Area Technical College as a Culinary Arts Instructor from 2013 to 2017, teaching students how to hone their skills and prepare them for work in the industry.
In November of 2014, he spent 4 weeks in Austin, Texas at Qui Restaurant to learn more about modern Filipino cuisine in a fine dining setting. Jimmy then traveled for one month to The Philippines in the summer of 2015 to focus on traditional techniques of Filipino cooking and learn the foundation of their craft. This led to conceptualizing the Spring 2016 Exploration Menu for Sanford Restaurant, which emphasized on traditional Filipino dishes.
Recently, Jimmy worked the 2017 PGA U.S. Open at Erin Hills Golf Course. In addition to working in the Player Hospitality and Rolex Lounge tents on the course, he cooked dinners each night of the tournament for professionals Zach Johnson, Rickie Fowler, and Justin Thomas.
Jimmy currently provides meals for the CEO of Northwestern Mutual Insurance Company, along with various private dinners and caterings.
