Jimmy started working in restaurants at the age of 14 bussing tables. Working for Tony Roma’s Corporation through high school and college, he continued to learn front and back-of-the-house operations. After 15 years with the company, he left to enroll in the culinary program at Milwaukee Area Technical College. In 2011, he joined the Sanford Restaurant team.

Jimmy then traveled for one month to The Philippines in the summer of 2015 to focus on traditional techniques of Filipino cooking and learn the foundation of their craft. This led to conceptualizing the Spring 2016 Exploration Menu for Sanford Restaurant, which emphasized on traditional Filipino dishes.
